Don’t Waste Any More Wine

It’s been a perfect evening. You’ve been entertaining your friends with a casual meal and a few bottles of wine. It’s well after midnight and they’ve said their goodbyes and headed for home. You wander around collecting the empties and find a couple of bottles that weren’t quite finished.
Instead of pouring them down the drain, find yourself an ice cube tray orsome individual small ice containers. Fill them with leftover wine and put them into your freezer.
Next time you make a hearty beef stew, add one or more of the red wine ice cubes and see the taste perk up. White wine ice cubes make chicken casseroles more succulent, too. Once you’ve tried it, you’re bound to think up other uses for these special ice cubes, and want to keep a stock in the freezer all the time.
But suppose you’ve succumbed to the temptation to bag a bargain bottle of wine that turned out to be undrinkable? Most people have to own up to that at some point in their lives. But this is practically a full bottle, and you don’t have enough ice cube containers.
You might think the only other thing you can do is to upend these bottles in the sink, and watch your dollars glug away down the pug hole. But you’d be wrong.
Here’s another idea for when you find you just can’t drink that bottle of cheap plonk, so that you don’t have to throw it away. Do a little preparation and then use it as a base for a luscious long cocktail.
Wrap slices of lemon in cling film and freeze. Make sure you also have some ice cubes made with just water. Put your wine to cool in the fridge, even if it’s red.
When everything is cold, take a half-pint glass. It could have been cooled in the fridge, though that’s not essential. Put a couple of ice cubes, and two frozen lemon slices (minus the cling film of course), into the glass. Slosh over some of the wine to come about half way up. Top it up with lemonade, and savour it.
Try it out yourself before making it for your friends. If you don’t like your drinks as sweet, go easy on the lemonade, or use soda water instead. If you prefer your cocktails more alcoholic, try it with peach schnapps, green chartreuse or another colourful liqueur that you like, or whatever you have to hand. You can ring the changes with different kinds of fruit as well. The plonk was so cheap, you can afford to test it out until you find the way you like it.
You never know, you might decide you like it so much that you’ll go and buy some more. Make up names for your new drinks, and your friends could be clamouring for your cocktail specials and never know how you arrived at them.
