Simple Recipe Ideas for Chicken and Turkey Leftovers

Most families enjoy a large turkey or chicken dinner once in a while. Even with the best of plans, there’s always the leftovers to deal with it. If you’re tired of eating chicken or turkey sandwiches the you’ll be excited to try these new spins on leftovers. These ideas will not only get rid of your extra food, but you’ll save time.

Bacon and Sweet Potato Snacks

Cube up your left over sweet potato slices and place them on a baking sheet. Cover them with a small piece of pre-cooked bacon and a chunk of pineapple. Keep the stack together with a tooth pick and then bake at 350 degrees for 5 to 7 minutes.

Pot Pie

Combine two cups of leftover chicken or turkey with about 20 ounces of gravy. Add a package of frozen vegetables and mix them together in a casserole dish. Cover with some refrigerated biscuits and then bake at 400 degrees for 15 to 18 minutes.

Barbeque Turkey Pizza

Get a pre-baked pizza crust and combine equal parts of tomato sauce with barbeque sauce. Spread the mixture over the pizza crust. Then mix three tablespoons of barbeque sauce with 1 ½ cups of sliced chicken or turkey. Cover the crust with mozzarella cheese, place your sliced poultry and, if you like, pre-cooked broccoli. Bake the pizza at 450 degrees for 10 to 12 minutes.

Potato Patties

Use 2 cups of mashed potatoes, a beaten egg, 1 cup of diced onion and salt and pepper to taste. Mix the ingredients together and then heat 2 to 3 tablespoons of oil in a skillet. Scoop ¼ cup of the potato mixture into the skillet and pat it down into a four inch circle. Cook for about four minutes or until the bottom is brown and then flip over until completely cooked.

Turkey Pasta

Heat leftover turkey in a skillet with oil and pre-cooked vegetables. Add some alfredo sauce and serve over cooked and drained pasta. You can also add turkey into your favorite lasagna recipe for a new twist on an old favorite.

Chicken Quesadillas

Add strips of chicken to a layer of Monterey jack cheese on a flour tortilla. Cover with more cheese and another tortilla and heat in a skillet until the cheese is melted and the tortilla is slightly crispy. Serve with sour cream and salsa.

Turkey and stuffing bake

Stir in ½ cup of fried onions with 3 cups of your leftover stuffing. Spread the mixture into the bottom of a baking dish and press it down to form a “crust.” Combine a can of cream of broccoli soup with ¾ cup of milk, 1 ½ cups of chopped turkey and a package of thawed, drained peas. Add this mixture to the top of the shell and bake at 350 degrees for 30 minutes. Sprinkle ½ cup of fried onions on top and bake an additional five minutes.
